Alligator and crawfish cheese dip, swamps, charm, chicken skin cracklings, 90% humidity, mossy trees, courtesy and sweet potato soufflé—all things I experienced this week in Louisiana. The food was amazing, the people were friendly and helpful and the drivers were courteous. Except for the humidity, I wish I could have packaged everything up and brought it home.
